How it is made

Bean to cup, five steps

Nothing here is unusual. It is just done properly, every day, by the two of us.

    Sourced

    Single lots from Ethiopia Guji and Colombia Huila, bought on the same two farms each season.

  2. 02

    Roasted

    Every Monday, up the road in Brunswick. Twelve-kilo batches, never more.

  3. 03

    Rested

    Seven days in a valve bag before it goes anywhere near a hopper. Fresh is not the same as ready.

  4. 04

    Ground

    To order, one cup at a time, on a burr set we dial in twice a day against the weather.

  5. 05

    Pulled

    18 grams in, 36 out, 28 seconds. If it misses, it goes in the bin and we start again.

Us

Two roasters, one small room

We opened in 2023 with a two-group machine, six tables and a rule that the coffee had to be good enough to sell on its own.

Beans are roasted up the road in Brunswick every Monday, which is why we are shut that day. The kitchen runs all day because Gertrude Street eats at odd hours.

Six tables, so weekends go early. Call us or send a WhatsApp with the day, the time and how many of you there are. We answer from open until close.

Larger groups and the back room: ask on the phone. We do not take deposits.
